Good question! My hubby told me just yesterday that he wishes I would reserve "I don't know" for times that I genuinely don't know, instead of it being a euphemism for "I don't care."
I guess in some ways it does sound like the easy way out. On the other hand, when you compare the size of my brain with the size of the universe, I think it's a miracle that I manage to know anything.
